1 3-5 lb corned beef
1 onion, studded with 3 cloves
2 carrots, peeled and halved
1 rib celery, halved
2 sprigs cilantro or parsley
1 green cabbage, cut into 6 wedges
6 to 8 small red new potatoes
3 green onions
2 Tbsp chopped cilantro or parsley
1/2 lb fresh broccoli

Directions:
Directions:
Simmer Corned beef in Dutch oven for 2 1/2 to 3 hours, adding onion, carrots, celery and cilantro. Remove Corned beef, set aside and keep warm. Add cabbage, potatoes, green onions and cilantro to pan. Bring to a boil, reduce heat and simmer 30 minutes. Add broccoli during last 5 minutes. Arrange corned beef on platter with vegetables and pass broth.
