Ingredients:  
1 c tomato juice (or 1 can tomato sauce, or 6oz can tomato paste with 1 can water)
3/4 c oatmeal
1 egg, beaten
1/4 c chopped onion (or more)
1 chopped green pepper
1 tsp salt
1/4 tsp pepper
1 1/2 lb. lean ground beef
Topping glaze: Ketchup or BBQ sauce

Optional: all or any of the following for additional flavor:
2 ribs celery with leaves chopped
1 red pepper chopped
1 tsp garlic minced
1/2 tsp dried thyme
1 tsp paprika
1 Tbsp Soy Sauce
1 tsp Dijon mustard

Directions:
NOTE: if you have a food processor you can chop the onion, peppers (and if using celery and garlic) all together to save time and effort.
Combine all ingredients except ground beef, mix well. Add ground beef, mix lightly but thoroughly. Shape into loaf on rack in roasting pan. Bake 1 hour. Glaze top with ketchup or BBQ sauce 15 minutes before done.
