1 c. sugar
1/2 c. Dutch-processed cocoa powder
1 c. flour
2 tsp. baking powder
1/4 tsp. salt
1/2 c. milk
4 T. unsalted butter, melted
1 large egg yolk
2 tsp. vanilla extract
1/2 c. semisweet chocolate chips
1 c. boiling water
Vanilla ice cream or whipped cream

Adjust oven rack to center position and heat oven to 350º F. Spray an 8-inch square glass cake pan with cooking spray. Whisk 1/2 c. sugar and 1/4 c. cocoa in a small bowl. Whisk together flour, remaining sugar and cocoa, baking powder, and salt in a large bowl. Whisk milk, butter, egg yolk, and vanilla in a medium bowl until smooth. Stir milk mixture into flour mixture just until combined. Fold in chocolate chips(batter will be stiff). Using rubber spatula scrape batter into prepared pan and spread into corners. Sprinkle reserved cocoa mixture evenly over top.Gently pour boiling water over cocoa, DO NOT STIR. Bake until top of cake is cracked, sauce is bubbling, and toothpick inserted into cakey part around edges comes out with moist crumbs and not batter, about 25 minutes.Cool on rack for at least 10 minutes. To serve, scoop warm cake into individual serving bowls and top with ice cream or whipped topping. To make Baby Cakes: Spray 8-6oz ovenproof ramekins with cooking spray. Fill each with 2 T. batter, top with 1 1/2 T. cocoa mixture, and 2 T. boiling water. Arrange on a rimmed baking sheet and bake until tops are cracked about 20 to 25 minutes. Serve with ice cream or whipped topping too!
