Red Slaw:
3 c chopped red cabbage
1 can (16 oz) diced beets, drained
3/4 c chopped red onion

Green Cole Slaw:
3 c chopped green cabbage
3 carrots,shredded
3/4 c chopped Vidalia (sweet) onion

1/3 c cider vinegar
3 Tbsp brown sugar (white sugar for green slaw) (can use less)
1 Tbsp oil
1 tsp salt
1/2 tsp caraway seeds
1/8 tsp pepper
lettuce leaves, to line bowl (optional)
red onion slices, as garnish

Directions:
Directions:
In a large bowl, combine cabbage, beets or carrots, and onion. Set aside
In a small saucepan, mix vinegar, sugar, oil, salt, caraway seeds and pepper. Over med-high heat, bring to a boil. Pour over cabbage mixture, toss well. Cover and chill at least 4 hours or overnight, stirring occasionally.
Serve in a lettuce lined bowl and garnish with red onion slices.
