2 c green cabbage, chopped
1 c red cabbage, chopped
1 c savoy cabbage, chopped
1 carrot, peeled and grated
1 red pepper, thinly sliced
1/4 c currants
2 Tbsp raw pumpkin seeds
2 Tbsp raw sunflower seeds
1 Tbsp unhulled sesame seeds
DRESSING
1/3 c unsweetened soy, hemp, or almond milk, or water
1 apple, peeled, cored and sliced
1/2 c raw cashews or 1/4 c raw cashew butter or 1/2 c raw almonds
1 Tbsp balsamic vinegar
1 Tbsp currants for garnish
2 Tbsp unhulled sesame seeds, to be toasted for garnish

Directions:
Directions:
Lightly toast 2 tablespoons of the sesame seeds in a dry pan over medium heat for 3 minutes, shaking the pan frequently. Mix all salad ingredients together in a bowl. In a blender, blend soy milk or water, apple, cashews or almonds and vinegar, then toss with salad. Garnish with currants and toasted sesame seeds. This is good made a day ahead to allow flavors to mingle.
