3/4 c flour
1 1/4 c corn meal
1/4 c sugar
2 tsp baking powder
1/2 tsp salt
1 c milk
1/4 c oil
2 eggs

Directions:
Directions:
Heat oven to 400º. Grease 8 or 9 inch cake pan. Combine dry ingredients. Stir in milk, oil, and egg, mixing just until moistened. Pour into pan. Bake 20 to 25 minutes or until toothpick comes out clean.

Variations
-Double and bake in 9x13 pan
-Makes about 9 muffins
-Cook on a greased griddle at 300º for corn 'hoe cakes', serve with butter and honey or syrup.
-Stir in grated orange or lemon peel

OK so this is the 'Yankee' version of cornbread (light, sweet, and moist, my kids liked this when little). See 'Grandma's Cornbread' for authentic crusty all-corn southern cornbread cooked in a cast iron skillet, which is what I grew up on.
