6 to 8 large onions
3 cloves garlic
thyme (2 tsp )
1/2 cup sherry
6 to 8 cups beef stock

Gruyierre cheese for topping or Swiss
Baguette slices toasted

Directions:
Directions:
Slice thinly onions and saute for 15 to 20 min in olive oil or butter
add garlic and thyme

deglaze with sherry for 5 min, scraping pan to bring up flavor bits

add broth and simmer for 20 min or longer

to serve, ladle in bowls, top with baguette and cheese, broil to melt!!!
