2 lb. lean ground beef or use rotisserie chicken off the bone
1/2 onion minced
1 10 oz.can Rotel
1 lb. Velvetta
1 can corn
2 cans mixed vegetables
1 can pinto beans

Directions:
Directions:
Brown ground beef and onion. Drain. If using the chicken. use 2 T. butter and brown onion. Add to Crock Pot. Pour in all other ingredients liquid and all. Cook on slow for 8 hours or high 4 hours. You can add Velvetta as soup cooks or add at the end to serving bowl with tortilla chips.
