2 medium green bell peppers, cut into thin strips
1 cup onion, chopped
2 tsp olive oil
400 g boneless skinless chicken thighs, rinsed and patted dry
1 tbsp oregano
1/2 tsp rosemary
1/2 tsp garlic
3/4 tsp salt
3/8 tsp pepper, divided
8 oz uncooked orzo pasta
2 tbsp lemon juice, and grated peel
1/2 cup water
2 oz feta, crumbled

Coat crock pot with non-stick cooking spray. Add peppers and onion

Heat oil in pan and brown chicken on both sides. Transfer to slow cooker, overlapping if necessary

Sprinkle chicken with oregano, rosemary, garlic, salt and pepper

Cover and cook on Low 5 - 6 hours or on High 3 - 4 hours, or until chicken is tender

Transfer chicken to plate

Turn crock pot to High. Stir orzo, lemon juice, lemon zest, water and remaining 1/2 tsp salt and pepper into slow cooker. Top with chicken

Cover and cook 30 min or until pasta is done.

Garnish with feta and parsley, if desired
