1 can (14.5 ounces) diced tomatoes in sauce
1/2 cup chicken broth
1/4 cup ketchup
2 teaspoons yellow mustard
1 teaspoon Worcestershire sauce
3/4 teaspoon hot sauce
3 cloves garlic, crushed
1/2 teaspoon salt
1/4 teaspoon pepper
1 large onion, thinly sliced
1 large green pepper, seeded, cored and thinly sliced
1/4 cup sliced black olives
1/4 cup raisins
1 tablespoon capers
4 to 6 chicken thighs or 4 boneless, skinless breasts
1 1/2 cups (6 ounces) shredded Edam or Gouda cheese
2 tablespoons chopped flat-leaf parsley
hot cooked rice (optional)

Coat slow cooker with nonstick cooking spray. Add tomatoes in sauce, broth, ketchup, mustard, Worcestershire sauce, hot sauce, garlic, salt and pepper. Stir well to combine.
Add onion, bell pepper, olives, raisins and capers. Stir well to combine.
Add chicken. Spoon sauce mixture over chicken until well coated. Cover. Cook on high 3 to 4 hours or until chicken is fork-tender.
Turn off slow cooker and uncover. Sprinkle cheese and parsley over chicken. Cover and lt stand 3 to 5 minutes or until cheese is melted. Serve over rice, if desired.
