Mushroom-Swiss Meatloaf Recipe

1-1/2 pounds lean ground beef
8 oz. mushrooms, fine chopped
2 slices of bread, diced small
1 egg, beaten
1 Tbl Worcestershire sauce
1 tsp salt
1/2 tsp onion powder
1/2 tsp garlic powder
1/4 tsp black pepper
6-8 slices Swiss cheese

Preheat oven to 350 degrees

1) Finely chop the mushrooms using a food processor; do not chop so finely that it becomes a paste.

2) Combine in a large mixing bowl the ground beef, mushrooms, and bread. Add the onion powder, salt, pepper, and garlic powder. Mix until all ingredients are well combined.

3) Add the Worcestershire sauce to the beaten egg and blend slightly. Add to the meat mixture and combine all together. The mixture should be a little wet.

4) Divide mixture in half. Cover the bottom of a loaf pan with one half of the meat mixture and top with half of the cheese. Repeat with the other half of the meat mixture and again top with the other half of the cheese.

5) Bake in the oven for 1 hour, or until cheese is melted and bubbly. Remove from oven and allow to rest for 5 minutes before removing from the pan. Slice into one inch slices and serve.

Because we get tired of the same old meatloaf, decided to try something that added some different flavors to the mix. This one can also double as a hamburger recipe!! ~ Tom

** To use as a hamburger mixture, omit the bread slices and form the mixture into eight hamburgers. Cook to desired doneness on the grill and top with the cheese just before serving.
