4 lb. beef tip, round, or rolled rump roast
OR
4 lbs sirloin steak tips

2 1/3 c rice
4 2/3 c water
2 tsp salt
1 tsp ground turmeric
1/2 c snipped parsley
Optional: 1 carrot grated

Marinated Tomatoes
2 medium tomatoes, cut into 1/4 inch slices (or into 1 inch cubes)
1/4 c olive oil
2 Tbsp red wine vinegar
1/8 tsp salt
3 drops red pepper sauce
2 large cloves garlic, finely chopped

Directions:
Prepare Marinated Tomatoes:
Place tomatoes in glass or plastic dish. Mix remaining ingredients, pour over tomatoes. Cover and let stand at room temperature about 3 hours.

Beef:
Place beef, fat side up, on rack in shallow roasting pan. Insert meat thermometer so tip is in center of thickest part of beef and does not rest in fat. Roast uncovered in 325º oven until thermometer registers 160º, about 3 hours.
OR
Grill steak tips until desired doneness.

Rice
About 30 minutes before beef is done, heat rice, water, salt and turmeric to boiling, stirring once or twice; add carrot if using and reduce heat. Cover and simmer 16 minutes (don't lift cover or stir). Remove from heat, fluff rice with fork. Cover and let steam 5 to 10 minutes. Stir parsley into rice.

Serving: Cut beef into 1/4 inch slices. Arrange beef and tomato slices over rice, spoon remaining marinade over beef.
