Ingredients: 3/4 c flour (can substitute any mix of almond, oatmeal, coconut flour) 3/4 tsp salt 1 Tbsp cinnamon 1 c brown or white sugar 3/4 c oatmeal (Optional) 1/2 c butter 6 medium cooking apples, 6 cups 1/2 c coarsely chopped walnuts
Optional: whipped cream (heavy or whipping cream, 1/2 tsp vanilla and/or almond extract, 2 Tbsp sugar) vanilla ice cream
Apple/Cranberry/Pear variation (This is excellent!) 3 apples, 3 pears, 1/2 of a 12 oz bag fresh cranberries. Substitute pecans for the walnuts. Bake in largest Corning casserole dish.

Directions:Preheat oven to 350. Mix flour, salt, cinnamon and sugar in a medium mixing bowl. With a pastry blender (or two knives) thoroughly cut in butter until mixture looks like crumbs. (Optional: mix in oatmeal)
Peel, core, and cut apples into eighths, slice crosswise thinly. Turn apples into a rectangular 11x7x1 1/2 inch baking pan. Sprinkle with walnuts, put flour mixture on top. (Pan will be very full, but apples will sink during baking). Bake in a preheated 350º oven until apples are tender, about 60 minutes. Remove from oven, place under broiler to brown top lightly. Serve warm with whipped cream or ice cream. |
