Dressing
1 Tbsp sugar
1 Tbsp finely chopped gingerroot
1 garlic clove, minced
2 Tbsp olive oil
2 Tbsp rice vinegar
1 Tbsp soy sauce
*Optional: chopped chives, sub chinese black vinegar for part of rice vinegar, sprinkle with sliced almonds

Salad
4 c thinly sliced Chinese (napa) cabbage
1 c halved fresh snow pea pods (about 4 oz)
1/2 med cucumber, quartered lengthwise, sliced
1/2 med red bell pepper, coarsely chopped

In small bowl, combine all dressing ingredients. In large serving bowl, combine all salad ingredients, mix well. Just before serving, pour dressing over salad, toss gently to coat.
