8 eggs
1/4 cup egg whites (from carton) (optional)
1/2 cup milk
1 cup (4 oz.) shredded cheddar cheese
1 cup finely chopped cooked ham
1/4 cup finely chopped green pepper (optional)
1/4 cup finely chopped onion
1 t. salt
1/2 t. pepper
1/2 t. season salt

May add or substitute bacon, sausage, mushrooms, tomatoes or other types of shredded cheese.

Directions:
Directions:
In bowl, whisk the eggs, egg whites and milk until light. Stir in cheese, ham, green pepper and onion.

Pour into greased 9 inch baking dish. OR you may bake in individual ramekin -- put ramekin in water bath.

Bake at 400 degrees in a water bath for 40 minutes or until knife comes out clean.

For the ramekins, bake at 400 degrees for 30 minutes in water bath.

1/1/12 - Kathy: I use this recipe or a variation from it almost weekly. I make these for Grandma Dolores and I to warm up for breakfast during the work week. It works well warming up in the microwave and lasts for a week or so in the refrigerator.
