6 potatoes
9 tbls olive oil, separated
1/4 tsp paprika
1/4 tsp garlic powder
1/8 tsp pepper
1/4 tsp salt
1 tbls parmesan cheese (shaker kind)
1/2 lb bacon
2 c Cheddar cheese, shredded
green onions and sour cream

Directions:

Pre-heat oven to 475˚ F. Grease pan with 3 tablespoons olive oil. Cook and crumble bacon. While bacon is cooking, wash and cut potatoes in half length-wise. Scoop out potato from each leaving about 1/4 inch. In a small bowl, stir together 6 tbls olive oil, paprika, garlic powder, pepper, salt and parmesan. Brush on both sides of potatoes. Bake for 7 Minutes upside down, then flip them over and bake for 10 minutes. Top with crumbled bacon and cheese. Return to oven for another 3 minutes or until the cheese is melted to your liking. Serve straight away, but I also like these warmed up too. Serve with chopped green onions and sour cream.
