Go to Grandma Bobb’s in August. Wander out to the garden and end up in the large tomato section. Select a tomato that is a nice shade of red, even a slight tinge of orange. Take inside immediately. Slice off the bottom nub. Core. Peel (this step is a must). Slice into 1/4 - 1/2 inch slices depending on how many you want to include on your plate. Sprinkle lightly with salt and pepper, then pile small curd cottage cheese on top of the tomatoes. Sprinkle again with salt and pepper. Dig in.

The keys to this recipe are:
1) the timing of the tomato from the vine to the table - has to happen immediately,
2) the temperature of the tomato - always room temp and never from the fridge.
3) must be just ripe enough that the peel comes off with little effort using a paring knife.
