4 slices of bacon halved
1 med onion, diced
1 lg green pepper, diced
3 sm (16 oz) cans pork and beans
1/2 c brown sugar
3/4 c of your favorite barbeque sauce or ketchup
1/4 c distilled or cider vinegar
1 tsp dry mustard or 2 tbls Dijon mustard

Adjust oven rack to the lower/middle position and heat oven to 325° F. Fry bacon in a large skillet until partially cooked. Drain on paper towels. Add onions and peppers to drippings in pan and saute until tender, about 5 minutes. Add beans and remaining ingredients and bring to a simmer. Pour bean mixture into an oven-proof pan. Top with bacon. Bake 1 hour and 15 minutes or until sauce is the consistency of syrup. Let stand to thicken before serving. If doubling recipe then bake for 2 hours.
