3 eggs
1 c sugar
3/4 c flour
1 tsp baking soda
1/2 tsp vanilla
1 tsp cinnamon
1/4 tsp ginger
1/4 tsp nutmeg
2/3 c pumpkin

Filling:
8 oz cream cheese
1 c powdered sugar
1 tbls butter
1/2 tsp vanilla

Directions:
Directions:
Grease and flour 15 x 10 x 1 jelly roll pan. Mix ingredients with mixer and pour into pan. Bake at 375° F degrees for 15 minutes. Turn out on a towel sprinkled with powdered sugar. Roll up in towel (I use a really thin one), Cool. Un-roll and spread with filling. Re-roll and chill.

Diane learned most of the cooking basics from her mom but was also from the era when everyone had to take home ec in both junior high and high school. She did even took an advanced cooking class and baking was and is her favorite. She figured since she could read and follow directions then she should be able to follow a recipe! Although now, she experiments a lot and have come to that phase where she cooks without a recipe. Her family often jokes that if they like one of her meals, they will never be able to have it again since she didn't write it down and usually forgets what she did!!!
