2 loaves Pepperidge Farm Farmhouse white bread (or any dense firm white)
1 large onion, diced medium
2-3 stalks celery, diced medium
1 qt. chicken broth (or homemade turkey broth would be even better)
2 sticks butter
Salt
Pepper
Poultry seasoning
Sage

Directions:
Directions:
Leave bread out for at least overnight to dry out. Saute onion and celery in butter until well softened but not limp. Cut bread into ¾ - 1” cubes place in extra large mixing bowl. Add onion/celery mixture to bowl and mix well. Add broth slowly to moisten well. Probably 3 cups or so. Bread cubes should be saturated but not dripping. Add salt and pepper to taste and mix. Add ½ tbsp. poultry seasoning. Add ½ tsp. ground sage and taste for seasoning, will probably want to add more poultry seasoning and sage. Lastly add stick melted butter and mix well.

Place in well-buttered baking dish 9x9 or 8x11 will do. Chop ½ stick of butter and scatter over top. Bake at 350º for approximately one hour. Check after 40 minutes but could take as long as 75 minutes. Dish should be well browned. If available, pour ½ c. turkey drippings over casserole before serving.
