One large sweet potato for every two people cut into 8 wedges length-wise or slice into ½” rounds
Kosher salt
Ground black pepper
Vegetable oil
Spice mix

Spice Mix:
1 tbsp. paprika
1 tsp. chili powder
1 tsp. ancho chili powder
½ tsp. chipolte chili powder

1 ½ tbsp. five spice powder
½ tsp. ground ginger

Cajun spice mix
Ground garlic
Onion powder

Note: if making more than 3 potatoes you will need more spice mix.

Preheat oven to 400º. Place potato wedges in large bowl. Add enough vegetable oil to lightly coat wedges when tossed. Add Kosher salt and pepper to taste and toss. Add 1/3 spice mix and toss, repeat twice more (this keeps spice mix from sticking to one side of the wedge).
Line baking sheet with parchment paper (will stick to aluminum foil) and place wedges on sheet and bake for 40 minutes or so until brown around edges.

Serve by themselves or with one of the dipping sauces (under sauces).
