3/4 Pound of unsalted butter room temperature
1 Cup sugar
1 Teaspoon pure vanilla extract
1 Teaspoon pure almond extract
3 1/2 Cups All Purpose Flour
1/4 Teaspoon of salt
1 1/2 cups small diced pecans

Directions:
Directions:
Preheat oven to 350º degree

Mix together the butter and sugar until they are just combined. Add the vanilla, almond extracts. in medium bowl, sifts together the flour and salt, then add them to the butter and sugar mixture. Add the pecans and mix on low speed until the dough starts to come together. Dump onto a surface dusted with flour and shaped into disk.

Wrap in plastic and chill for 30 minutes. Roll the dough 1/2 inch thick and cut into 2 1/2 inch with and shape you like.

Place the cookie on ungreased cookies sheet pan.
Bake for 20 to 25 minutes or until brown.
