3 T. unsalted butter
1 T. olive oil
4 Skinless boneless breasts, cut into 1/2 inch strips
2 shallots, minced
2/3 C heavy cream
1/2 C white wine
1/3 C Oil packed sun-dried tomatoes chopped
3 T chopped fresh basil

Directions:
Directions:
Melt butter with olive oil in a heavy large skillet over medum-high heat. Season chicken with salt and pepper. Add to skillet and sauté until light brown and just cooked through, about 3 minutes. Transfer chicken to a plate. Add minced shallots to the skillet, sauté 1 minute. Add heavy cream, wine, sun-dried tomatoes and basil. Bring to a boil, cook until sauce thickens, stirring occasionally, about 4 minutes. Return chicken to pan, cook just until heated through, about 2 minutes. Season to taste with salt and pepper and serve.
