1 lg Sweet Potato
5 Egg Whites
1/4 c. Coconut Oil
1/3 c. Honey
1/2 c. Dark Chocolate Chips
3 tbsp Coconut Flour
2 tbsp Cocoa Powder
1/4 tsp Baking Powder
1/4 tsp Vanilla Extract
1/4 tsp Cinnamon
1/8 tsp Salt

Preheat Oven to 400º.
Pierce potato with a fork, wrap in foil and bake for 45 minutes or until soft. Remove from oven, allow to cool then scrape out the flesh and set aside.
Lower Oven to 350º
In a stand mixer, beat together the potato, coconut oil, honey, and vanilla. Next beat in the egg whites one at a time until well combined.
In a mixing bowl, sift together the coconut flour, cocoa powder, baking powder, cinnamon, and salt and then slowly add to the wet ingredients until thoroughly combined then fold in the chocolate chips.
Pour the batter into a greased 8" square baking pan and bake 30 - 40 minutes or until a toothpick inserted into the middle comes out clean.
