3/4 c. sugar
2 tbsp honey
2 tsp vanilla extract
Kosher salt
2 c. unsalted raw peanuts

Directions:
Directions:
Preheat oven to 400º. Lightly coat a rimmed baking sheet with cooking spray. Combine the sugar, honey, 3 tbsp water, vanilla, and 1/2 tsp salt in large heavy bottomed pot. Cook over medium heat, stirring with a wooden spoon until sugar is dissolved. Add peanuts, stirring occasionally until mixture begins to simmer, about 1 minute. Continue cooking, stirring constantly until the sugar mixture dries out and clings to the nuts, about 2 to 4 minutes. Pour onto prepared sheet. Bake about 10 minutes, stir and then bake another 2-4 minutes. Remove from oven and stir. Store covered at room temp for 1 week.
