Turkey Gyro Recipe

Gyro:
1/2 small onion, chopped
2 T, chopped parsley
2 garlic cloves, pressed
1 lb. lean ground turkey
1/2 tsp. dried thyme
1/2 tsp. salt
1/2 tsp. ground black pepper
2 tsp. olive oil
4 flat pita rounds (without pockets)
sliced cucumber and sliced tomatoes

Yogurt Sauce:
1/2 cup plain yogurt
2 garlic cloves, pressed
1/8 tsp. salt
2 T. chopped parsley
1/4 cup cucumber, finely chopped

Directions:
Directions:
Preheat oven to 350º. Add garlic, onion, 2 T. of parsley, turkey, thyme, 1/2 tsp of salt and pepper into mixing bowl. Mix until well blended.

Add oil to skillet, heat over medium heat for 1-3 minutes. As oil heats form turkey mixture into four thin loaves about 1/4" thick. Cook 1-2 minutes on each side or until browned. Place skillet in oven and bake 6-8 minutes or until internal temperature reaches 165º and loaves are no longer pink in center.

Prepare sauce. Combine yogurt, garlic, salt and reserved parsley. Add chopped cucumber and mix well.

To finish gyros, microwave pita bread in microwave 30-60 seconds; transfer to serving plates.

Remove turkey loaves from oven. Thinly slice and arrange over pita bread. Top each gyro with 1 T. yogurt sauce, sliced cucumbers and sliced tomatoes if desired.
