˝ cup shortening
1 ˝ cups sugar
2 eggs
2 cups flour
2 teaspoons baking cocoa
˝ teaspoon salt
1 cup buttermilk
2 ounces red food coloring
1 teaspoon baking soda
1 tablespoon vinegar
1 teaspoon vanilla extract
˝ cup margarine, softened
1 1-pound package confectioners’ sugar
8 ounces cream cheese, softened
1 teaspoon vanilla extract
1 cup chopped pecans

Directions:
Directions:
Cream shortening in mixer bowl until light. Add sugar; beat until fluffy. Beat in eggs. Mix flour, baking cocoa and salt together. Add to creamed mixture alternately with mixture of buttermilk and food coloring, mixing well after each addition. Dissolve baking soda in vinegar. Fold into batter with 1 teaspoon vanilla. Spoon into 3 greased and floured cake pans. Bake at 350 degrees for 35 minutes. Cool in pans for several minutes. Remove to wire rack to cool completely. Combine margarine, confectioners’ sugar and cream cheese in mixer bowl; beat until smooth. Beat in 1 teaspoon vanilla and pecans. Spread between layers of cake.
