Remove pits from 12 plums - do not cut the plums apart – fill centers with a lump of
sugar. (Grandma never did this, she always left the pits in).

3 T. Butter
1 t. Salt
2 C. Flour
3 Eggs
2 C. Riced Cooked Potatoes, cooled
1 C. Buttered, sugared crumbs

Directions:

Cut butter into flour. Combine with potatoes and salt. Mix in eggs and knead. Roll
out 1/4#” thickness on floured board. Cut into 3 ½” squares. Place plum on each
square. Moisten edges of dough and pinch it around the plum. Dust palms of hands with flour and shape the dough into dumplings. Gently drop the dumplings into kettle of boiling water, a few at a time. The water must not stop boiling. Cook for 15-20 minutes. Carefully lift out with slotted spoon. Roll in crumbs. If any dough is left over, cut into noodles and cook in the water. Serve with dumplings.
