2 medium fish filets (I have used salmon and walleye before)
2 T olive oil
1/4 t salt
1/4 t pepper
1/4 t sugar
2 T hoisin sauce
2 t fresh grated ginger
3 green onions slice into 1/4 inch pieces
1/4 t crushed red pepper flakes
1 T rice wine vinegar
2 t. soy sauce

Directions:
Directions:
In a small bowl mix together the Hoisin sauce, grated ginger, sliced green onions, red pepper, rice wine vinegar and soy sauce. Set aside.
Add olive oil to a frying pan and heat over high heat almost till smoking. Season the fish filets with the salt, pepper, and sugar on both sides. Add the fish to the frying pan and cook for 2 minutes (depending on thickness may take longer), uncovered. Carefully turn the fish and cook the other side for 2 minutes. Pour the Ginger Hoisin glaze over the fish, cover the pan and cook for 2 more minutes. Remove from heat and serve.
