"A man who was fond of wine was offered some grapes at dessert after dinner. "Much obliged," said he, pushing the plate aside; "I am not accustomed to take my wine in pills."--Jean Antheleme Brillat-Savarin, The Physiology of Taste

Ingredients:
Ingredients:
bone-in pork chops
2-3 cloves garlic
hot cherry peppers in a jar
mildy cherry peppers in a jar
1 c. white wine
1 c. chicken broth

Directions:
Directions:
Season chops with black pepper. I like to hold off on the salt because the broth can make things very salty, even the reduced sodium kind.

Sear in a hot pan until well browned. Add crushed garlic, peppers and the wine, bring to a low simmer and cover. Taste for salt and add if necessary.

I use 2 mild and 1 hot pepper per pork chop with a bit of juice from both jars. This can still be a bit hot so if you don’t like spicy then use ½ hot pepper per chop. These peppers are very seedy so you can cut them in half and remove the seeds if you like.

Cook chops until 150º+ (about 25 minutes or so) and remove to a plate and cover loosely with foil. Remove the peppers and reduce the liquid as much as you can, 2-3 tbsp. makes a great sauce. Serve peppers and sauce over chops.
