1/2 cup butter
5 large celery stalks, chopped
1 large onion, chopped
1-2 tsp. poultry seasoning
3/4 tsp. salt
1/2 tsp. pepper
1 - 14 1/2 oz. can chicken broth
2 loaves sliced firm white bread, lightly toasted and cut into 1/2 inch cubes
1/2 cup fresh parsley, chopped
2-4 eggs

Preheat oven to 350º. In 12 inch skillet, melt butter over medium heat. Add celery and onion, and cook 15 minutes or until tender, stirring occasionally. Stir in poultry seasoning, salt, pepper, chicken broth and 1/2 cup water, remove from heat. Place bread cubes in very large bowl. Add celery mixture, eggs and parsley, toss to mix well. Spoon stuffing into 2 9x13 pans, cover and bake 45 minutes. Uncover and bake until crisp and brown.
