1 lb. sausage, cooked and drained
10 eggs, slightly beaten
3 cups milk
2 tsp. dry mustard
1 tsp. salt
6 cups cubed day old bread
2 cups shredded sharp cheddar
1/2 tsp. black pepper
1/2 cup green onion, sliced

Directions:
Directions:
Preheat oven to 325
grease 9 x 13 pan. Combine eggs, milk, mustard and salt, mix well. Place half the bread in pan, sprinkle with half the pepper and half the cheese. Top with half the sausage and green onion. Repeat layering using remaining bread, cheese, sausage and green onion, pour egg mixture over casserole. Bake uncovered 60 minutes or until eggs are set. Cover with foil if top browns too quickly.
