1-2 beef shanks (or use stew meat)
1 med. onion, chopped
1 cup tomato juice
1 16oz. can tomatoes
2 tsp. salt
6 cups water
2 bay leaves
1 cup chopped celery
1 cup sliced carrots
1 cup diced potatoes
1 cup chopped cabbage
4 ounces wide egg noodles

Directions:
Directions:
in four quart covered pot, simmer meat in water and tomato juice with salt, onions and bay leaves for 2 hours. Add vegetables; cover and simmer 1 hour longer. During the last 10-15 minutes of cooking add noodles. Remove meat from bones, chop into bite size pieces and return to soup mixture. Before serving, remove bay leaves.
