"I have long believed that good food, good eating is all about risk. Whether we're talking about unpasteurized Stilton, raw oysters or working for organized crime 'associates,' food, for me, has always been an adventure."--Anthony Bourdain

Ingredients:
Ingredients:
4 c. sweet potato, cubed
1/4 c. white sugar
2 eggs, beaten
1/2 tsp. salt
4 T. butter softened
1/2 c. of milk or evaporated milk
1 tsp. vanilla extract
1 tsp. cinnamon
1/4 tsp. cloves
1/4 tsp. nutmeg

Topping Ingredients

1/2 c. packed brown sugar
1/3 c. flour
3 T. butter, softened
1/2 c. chopped pecans

Directions:
Directions:
1. Preheat oven to 325 degrees. Put sweet potatoes in a medium saucepan with water to cover. Cook over medium high heat until tender; drain and mash. I DO NOT boil the potatoes they get too watery instead I bake about 4-5 sweet potatoes depending on the size for a hour and then scoop the insides out.

2. In a large bowl, mix together the sweet potatoes, white sugar, eggs, salt, butter, milk, vanilla, cinnamon, cloves and nutmeg. Mix until smooth. Transfer to a 9x13 inch baking dish.

3. In medium bowl, mix the brown sugar and flour. Cut in the butter until the mixture is coarse. Stir in pecans. Sprinkle the mixture over the sweet potato mixture.

4. Bake in the preheated oven for 30 minutes, or until the topping is lightly brown.
