1 cup all-purpose flour
1 cup granulated sugar
1 tsp. baking soda
2 tsp. ground cinnamon
1 tsp. ground nutmeg
1/2 tsp. salt
3 eggs
1/2 cup chopped pecans
1 large Granny Smith apple, chopped
1 cup oatmeal
3 cups shredded carrots
1/2 cup raisins
2/3 cup peanut oil
1/2 cup shredded coconut

Directions:
Directions:
Preheat oven to 350º.
Place foil liners in cups of a muffin pan.
Mix together the flour, sugar, baking soda, cinnamon, nutmeg and salt. Blend well.
Add carrots, raisins, pecans, apple and coconut.
In a separate bowl, beat eggs and oil; add to dry ingredients and combine.
Fill liners with batter and bake for 25-30 minutes.
