2 T olive oil
4 c diced zucchini
1 c chopped onion
1/2 green pepper, sliced thin
3/4 c celery
1/2 tsp garlic powder
2 tsp basil
2 tsp oregano
1/4 tsp salt
Pepper to taste
1/3 c picante sauce
2 tsp mustard
1 med tomato, diced
1/2 c shredded jack cheese
Directions:
Directions:
Heat oil and stir in next 6 ingredients. Sauté until crisp tender. Combine basil, oregano, salt, pepper, picante and mustard.. Pour over vegetables and cook stirring for 3 minutes. Stir in tomatoes and top with cheese.
