4 lbs carrots, cut diagonally into 1/4-inch slices
1/4 cup water
1 Tbsp grated FRESH ginger
3 Tbsp butter or marg
1/2 cup pure maple syrup
1 Tbsp cider vinegar
1/4 tsp salt
1/4 tsp pepper
Chopped fresh parsley for garnish

Directions:
Combine carrots, water, ginger, and 2 Tbsp butter in pan. Cover and cook for 10 minutes, stirring occasionally. Uncover and cook 10 - 12 minutes till carrots are almost tender. Add maple syrup, vinegar, salt, and pepper and boil for 8 - 10 minutes, stirring frequently. Syrup will be thick and carrots coated with glaze. Remove from heat and stir in remaining 1 Tbsp butter. Pour in bowl and garnish with parsley.
