1 1/2 C onions, diced
1 8oz can tomato sauce
1 1/2 C cooked pinto beans
10 drops of hot sauce (opt)
1/2 tbsp plus 1 tsp chili powder
1 tsp honey
salt to taste
1/4 tsp cumin, ground
1/4 lb black olives sliced
2 cloves of garlic, minced
Pinch of cayenne pepper
8 corn tortillas
1/4 lb Monterey Jack Cheese, grated

Directions:
Directions:
Heat oil and saute 2/3 onions until clear. Add tomatoes and tomato sauce, half of garlic, cayenne pepper and hot sauce, 1/2 tbsp chili powder, honey, salt and cumin, Simmer uncovered for 30 min. Heat olive oil and saute remaining onions, garlic and black olives (reserve some for garnish) until onions are clear. Add remaining 1tsp chili powder. Taste for salt and add mashed beans. Stir well. heat oven to 350º. Fill each tortilla with 2-3 tbsp filling and 1 tbsp grated cheese. Roll up and place in shallow pan. over with sauce. Sprinkle with remaining cheese and olives. Bake for about 30 mins.
