1 (3 to 4 lb) pork roast
1 diced onion
2 cloves crushed garlic
2 tbsp shortening
4 tbsp flour
1/4 tsp cumin powder
4 to 6 green chilies, roasted and peeled, or 1 large can green chilies (or to taste)
1/2 tsp salt
1/4 tsp pepper

Directions:
In crock pot, put pork roast, onions and spices cover with enough water to cover roast. Cook for 4 hrs or until done. Pick out roast. Cool and shred or cut into small pieces.In skillet, melt shortening. Add flour to make paste, stirring constantly. Toast flour until golden brown. Add roast broth. Put green chilies in blender and blend until finely chopped. Add to skillet. Cook until slightly thickened. Add pork, more garlic and salt if needed. Simmer for at least 30 minutes. Serve with beans and Spanish rice or spoon over smothered burrito.
