2 sticks unsalted butter, at room temperature
4 ounces cream cheese
2 teaspoons pure coconut extract
1 teaspoon pure vanilla extract
1 16 ounce box confectioners’ sugar
3 cups sweetened shredded coconut plus more as needed, for garnish

Directions:
Directions:
Place butter and cream cheese in the bowl of an electric mixer fitted with the paddle attachment (or with a hand mixer) and beat on medium speed until light and creamy. Turn mixer on low and add coconut extract and vanilla extract, followed by the confectioners’ sugar. Continue beating until smooth, about 3 minutes. Frost!
