3 gallon cucumbers washed and cut in chunks
2 c. pickling salt to 1 gallon water
alum
4 qt vinegar
8 qt sugar
4 tsp. whole cloves
1 pkg stick cinnamon

Directions:
Wash cucumbers and put in salt and water. Leave 10 days. Put cheese cloth on top - wash the cheese cloth every morning stir cucumbers once a day for 10 days..
On 10th day wash and pour boiling water over cucumbers to which 1 tablespoon alum for each gallon of water has been added. Let stand 24 hours, drain and wash.Then bring to a boil vinegar, sugar, cloves and cinnamon. For 4 mornings drain juice off and boil juice, each time pour back over pickles. On the 5th morning pour pickles and juice in pot. Keep at low boil as you fill jars with pickles and juice. Seal jars.Process 10 minutes in hot bath. 15 pounds of pickling cucumbers make about 15 quarts of pickles.
