6 medium onions, sliced into thin rings
2 carrots, peeled and cut in chunks
3 stalks celery, scrubbed and chopped
2 parsnips, peeled and cut in chunks
4 cloves garlic, peeled and sliced
16 oz. frozen cauliflower
1 turnip, peeled and cut in chunks
1 T. chicken sp. mix
1 T. salt
1/2 t. pepper
1 T. oil

Directions:
In a large soup pot, heat oil. Add onions and saute until brown (like 10 min. ). Remove 3/4 of onions from pot and set aside. Add all veg. to pot and brown for a few min. Add water to cover, then add chicken sp. mix, salt & pepper. Bring to a boil, then lower the flame and simmer for 3 hours.
Blend soup with stick blender and return sautéed onions to pot. If too thick, you can add some water. Adjust spices to taste and let cook 1 more hour with onions.
