1 half-pint fresh raspberries
1/2 cup sugar
1 cup raspberry jam
1/4 cup water
1 tbl. raspberry liqueur (framboise)

Directions:
Directions:
Place raspberries, sugar, jam, and 1/4 cup water in a small saucepan. Bring to a boil, then lower the heat and simmer for several minutes. Turn off the heat and add the raspberry liqueur.
Process until smooth, then place pureed mixture in a fine sieve and push through to remove the seeds.
Store in refrigerator until ready to use.

Raspberry Coulis is the perfect accompaniment to French Chocolate Cake, but it's also great over cheesecake, crepes, pancakes and waffles.
