1 qt. of beans (fresh, or frozen)
2 oz. of pork side meat
1 tsp. sugar
Salt
Pepper

Directions:
Directions:
Slice the pork side meat into 1/4 inch thick slices. Place the pork in a saucepan over medium heat. Cook the meat until most of the fat has rendered in the pan. Add the beans to the pan and cover with water until the level is about 1 inch over top of the beans. Add the sugar, black pepper and salt. Stir well and bring to a low boil. Cover the pot and reduce the heat to medium low, simmering 1 hour or until done. Taste the beans and see if they are cooked to your desired tenderness. Add more salt or pepper if needed. Remove from heat when done and cover until ready to serve.
