Rib Rub:
3 T light brown sugar.
4 t Famous Dave rib rub (or other commercially purchased pork bbq rub)
1/8 t garlic powder.

Sauce:
Sweet Baby Rays BBQ sauce (thin with a little beer).

Directions:
Directions:
1. Approximately 2 hours before you plan to cook ribs:
Peel silver skin membrane off back of ribs & trim excess fat.
Season ribs liberally on both sides with rib rub.

2. Prepare grill for cooking:
Indirect heat at 275 degrees.
Fill smoker box with Cherry, Apple or Hickory wood chips.
Will only need 2 or 3 containers full placed over heat source/one at a time.

3. Cooking ribs:
Place ribs directly on grate (meat side up).
Cook for one hour using 275 degrees/indirect heat.
After 1 hr., flip ribs & replace on grill (meat side down).
Cook for 30 minutes, using 275 degrees/indirect heat.

4. After 30 minutes, place ribs on heavy duty aluminum foil.
Baste ribs liberally with bbq sauce (will steam w/sauce).
Wrap ribs in foil without tearing foil & form a “sealed” packet.
Return foil rib packet to grill (meat side up).
Cook for 45 minutes using 275 degree/ndirect heat.

5. After 45 minutes, discard foil & return ribs to grill.
Baste ribs on both sides with remaining bbq sauce.
Cook for 5 minutes on each side over direct heat to caramelize sauce.
