1 1/2 cups sugar
1 1/2 cups pumpkin (one 15-oz. can)
1 cup plus 2 Tsp. salad oil
1 1/2 tsp. vanilla extract
2 1/4 cups all-purpose flour
1 1/2 tsp. baking soda
1 1/2 tsp. baking powder
1 1/2 tsp. salt
1 1/2 tsp. ground cinnamon
1/4 tsp. ground cloves
1/4 tsp. ground ginger
1/4 tsp. ground nutmeg
3/4 cup chopped pecans, optional

Directions:
Directions:
Preheat the oven to 350º.
Grease 3 medium loaf pans.
Beat the eggs and sugar together well.
Add pumpkin, oil and vanilla, mixing thoroughly.
Sift flour, baking soda, baking powder, salt, and spices.
Add dry ingredients to pumpkin mixture and best.
Add pecans, if using.
Bake for 45 minutes.
