2 cups chopped cranberries
1/2 cup chopped walnuts, optional
1 1/2 cup sugar, divided
2 large eggs
3/4 cup melted and cooled butter
1 cup flour
1/4 tsp. salt
1/4 tsp. almond extract

Directions:
Directions:
Preheat the oven to 350º.
Butter 10-inch pie plate or 2 medium loaf pans or 3 mini loaf pans.
Add the cranberries, walnuts (if using) and 1/2 cup sugar to prepared pie plate or loaf pans.
Mix together eggs, melted and cooled butter, remaining 1 cup sugar, flour, salt and almond extract.
Stir the batter until it is smooth and pour it over the cranberry/walnut mixture.
Bake in middle of the oven for 40 minutes (for pie plate or medium loaf pans), or until a tester comes out clean.
If using mini loaf pans, bake for 50 minutes.
Let cool in pan and serve.
