1 large box lime jello
2 C. hot water
1 can crushed pineapple, (drained)
3/4 C. pineapple juice
3 tbs. mayonnaise
2 large ripe avocados (diced into small pieces.
1 tsp. lemon juice
Iceberg lettuce leaves if needed

Directions:
Directions:
Mix jello with 2 cups boiling water until dissolved. Add pineapple juice and let set till almost jelled. in a 7 x 10" pan. (Put this in freezer if you are in a hurry about 20 minutes.) Remove from refrigerator and put jello in medium bowl. Beat jello with electric mixer add mayonnaise, fold in avocados, lemon juice, and pineapple. It should be frothy and light green. Put back in pan, or jello molds,let set about an hour.
Serve on lettuce leaf or just on the dinner plate.

HINT; Halve avocado, remove pit. Put one unpeeled half in palm of hand and dice it, hold over dish and spoon it out of the shell. No mess.

This is my favorite St. Patrick's Day salad. It is frothy and green. It goes well with the corned beef, I always try to make things little kids will like and they love this salad.
