4 large white potatoes
1 large yellow onion, sliced thin
1 c. corn oil (more if needed)
Salt
Pepper

Directions:
Directions:
Peel and slice the potatoes about 1/8 inch thick or thinner. In a large cast iron skillet heat the oil on medium heat until hot. Add the sliced potatoes and fry for about 5 minutes before adding the onion. Using a spatula, turn the potatoes and onions. Cook an additional 5-10 minutes (or until tender) and slightly brown. Remove using a slotted spoon and place on paper towels to drain. Sprinkle with salt and pepper.
