1 (15 oz.) can pink salmon, drained and de-boned
2 eggs, lightly beaten
18 to 20 saltine crackers, crushed (about 1/2 the stack)
Salt
Pepper
Corn oil for frying

Directions:
Directions:
Mash the drained salmon in a bowl. Add the eggs, crushed saltines, salt and pepper. Mix well. Shape into six patties. Heat enough oil to cover the bottom of a cast iron skillet over medium heat. Fry patties on one side until golden brown, then gently turn and fry the other side.
